I will give you my post-RotS headcanon for Ahsoka! Ahsoka is offworld when Order 66 and Operation: Knightfall go down, and she manages to survive and get back to Coruscant, where she's promptly arrested by stormtroopers, who fortunately turn out to be the remnants of her and Anakin's old squadron, including Captain Rex. He is not very happy with the current state of affairs (and also lies to her by telling her that Anakin died protecting Senator Amidala), and while his original plan was to get her offworld and somewhere safe, he eventually decides to defect with her. I'm pretty sure they're both dead by ANH, but they make a lot of trouble for the Empire before dying.

Mayor was never as fanatical as his mother or his sibs, but he did believe. He lost his faith between the beginning of the Calormene Occupation and the start of Dust -- not due to the Occupation and the false Aslan (though that didn't really help), but because there was a girl (well, a lady tiger) that he was sweet on, but unfortunately she turned out to be an undercover Provost's Guard and then also she was murdered by a rival gang.
Jar Jar was no longer active in politics by the time of the OT, but he was still around, and was actually a family friend of the Organas; Leia knew him personally. Despite a fairly long acquaintance, she was flabbergasted to find out that he'd personally known Anakin Skywalker and Obi-Wan Kenobi, which he blurted out the first time he met Luke.
Hmm, something about Dust that isn't in a current draft or hasn't come up elsewhere...
Prince Bahadur shut down the public theatres in Cair Paravel, and as many of the private ones as he could manage, though they keep popping up from time to time. Even puppet-shows in the street are liable to get the puppet-masters dragged off for treason if a passerby decides the content is insulting to the Calormenes.
The Jar Jar question came from last night when I was thinking of my own meme prompt about what Leia thinks of Vader. Assuming he is still alive I can't help thinking he would have a lot of background on their parents, though apparently in the Star Wars EU no one knows that Padme was Luke and Leia's mother.
